Solitude

Laugh, and the world laughs with you;

NUTRICIOUS DATE SCONES.
2 Cups whole wheat flour.
4 teaspoons baking powder.
1 cup chopped dates.
2 tablespoons butter.
2 tablespoons brown sugar
1 tablespoon wheat germ
1 egg and add water and milk to equal one cup.

Blend the dry ingredients. Rub in the butter, Add the egg and milk mixture. Mix lightly.
Pat and cut out with a glass, into rounds. Grease a baking dish and bake them in a medium oven for 10 to 15 minutes.
Serve with butter or cream. This is also good to serve with a salad lunch or in the kids school box. 
DATE LOAF.
1 heaped cup of dates.
1/4 lb butter.
1 cup brown sugar.
1 rounded teaspoon Bicarbonate of soda.
1 1/2 cups boiling water. 
Put all of this in a saucepan on a medium flame, stir and bring to the boil. Leave to stand until cool.
Add three cups of flour. If you uses brown flour , uses less. I add half a teaspoon ginger, half a teaspoon cinnamon and three to four Tablespoons of crushed walnuts and raisins. 
Mix carefully and bake in loaf tins that are buttered and floured. Bake at 300 for fifty minutes.
I serve Date Loaf with butter and honey. It is excellent after a day or two. Cool well, before storing.
CRUNCHIES.
This is a recipe that if over seventy to eighty years old. We use to eat them with a large glass of cold milk….delicious. Great for old folks to dip and ideal for TV and school snack.
2 cups of oats. 1 cup flour. 1 cup coconut. 1 cup brown sugar.
8oz butter.(240 grams) 1 tablespoon honey. 1 teaspoon bicarbonate of soda. 1 teaspoon baking powder. Half a teaspoon ginger powder. Half a teaspoon cinnamon powder. 

Boil butter and sugar until melted. Add soda and the other ingredients.
Pour into a greased pan. Pat down evenly. Take care if it is hot, do not burn fingers.
Bake in a 350f degree oven (180 Celsius) for 25 minutes. Cool for a while.
Cut and store in an air tight container. They do freeze well too. Dad will like these as much as the kids. Ideal for a gift for gran and grandpa too….take along a bottle of chilled milk and share it with them. Have fun.

SALADS,   FRESH AND  APPETISING

Summer time and we want easy and quick ideas. \

Baby leaves, Beets.,.Pears and grated goats cheese.

Wash and trim the leaves  Cut off the stalks that are a bother to chew. Arrange them on a platter and cut up four of five cooked beets, thinly sliced pears, grated goats cheese and a tasty dressing of balsamic vinegar, olive oil, salt and pepper. I toast brown bread and slice them into thin strips and saute them in spicy olive oil and arrange them on top.  Iuse a teaspoon of olive oil, basil and oregano in the  pan for a few minutes with the strips of toast.   Serve with chilled apple juice and enjoy.

Baked vegetables and a lettuce salad.

Wash, scrub the skins of sweet potatoes and potatoes. Bake them and then cube them and saute them in a little olive oil with onion flakes and half a teaspoon of freshly grated garlic., salt and pepper Serve
them on a bed of lettice with cubed or grated cheddar cheese on top. Great with a wholewheat bread and chilled tomato juice.

Mushrooms and wholewheat rice,
Take two cups of different mushrooms. slice and saute in olive oil, with diced onion and grated garlic.  Add a little curry powder.  Then serve them on a bed of hot wholewheat nd wild rice.  This is easy and quick and tasty for everyone.
